Twice Cooked Pork

Boil pork shoulder or pork belly in water with some crushed ginger for 20 minutes.

Remove pork and rinse with water, set aside to cool. Slice into thin slices.

Add oil to pan, pan fry pork slices on both sides until browned. Remove pork and set aside.

Add more oil if necessary, add chopped garlic to the same pan, add spicy dou ban jiang and dried chilli to the pan and stir fry for 30 seconds.

Add your choice of chopped vegetables like green bell peppers, deseeded green chili peppers, cabbage, green onions, chinese chives. Add soy sauce, oyster sauce, dark soy sauce, sugar to taste.

Add the pork back to the pan, pepper and shaoxing wine. Mix well and serve immediately.
